- Heat oven to 200C/fan 180C/gas 6.
- Boil the pasta in salted water for 2 mins less than recommended on the pack, then drain.
- Melt the butter in a saucepan and add the finely chopped garlic. Let this flash cook for 1 min, then stir in mustard sauce and the plain flour.
- Cook for 1 min more, then slowly pour in the milk whilst whisking.
- Continue to simmer the sauce for around five minutes.
- Pro tip. Keep whisking all the time until the sauce has thickened.
- Take off the heat, then stir in grated mature cheddar and grated parmesan and grated blue cheese.
- Stir the pasta and some seasoning into the cheesy sauce. Tip into a large ovenproof dish, or 2 individual oven proff dishes.
- Place back in the oven for 18 minutes or until browned on top
- Sprinkle with smoked Paprika and fresh chopped parsley.

- 200g mature cheddar grated
- 50g parmesan grated
