Henry’s Sweet Potato Wraps

Something a little different and a perfect lunchtime snack. The special relish will really add to the overall flavour and make it something you’ll want to make again and again!

Ingredients

  • 1 large Sweet Potato
  • 150g Plain Flour, plus as little extra for dusting
  • 1 tsp Salt
  • 1 clove of garlic, crushed
  • 1 small tomato
  • 1/2 a small red onion, finely chopped
  • 1 small chilli finely chopped
  • 1 lime, using both juice and zest
  • 10g Fresh Coriander, finely chopped
  • 1 small tin of sweetcorn
  • 3 tsps olive oil
  • a pinch of salt for the chicken
  • 500g of sliced chicken breasts
  • 1 bottle of your chosen Henry’s Sauce. The No Smoke range is perfect.

Instructions

  • Place the sweet potato into the microwave for 9 minutes on the high setting.
  • While the potato is cooking away, put the garlic, tomato, chilli, onion, lime juice and zest, sweetcorn and coriander into a large bowl and stir. Cover and place in the fridge. This will be your relish.
  • When the potato has finished and is cool enough to handle, cut in two and remove the potato from the skin. Place the potato into a bowl with salt and flour and mix into a dough.
  • Dust a chopping board with flour and divide the potato into 4 equal measures. Roll each of the 4 measures into individual circles, of about the thickness of a standard flour wrap.
  • Heat a large frying pan to high and place each of the circular wraps into the pan. Do not add any oil. Allow to cook for 2 minutes on each side. Large brown patches will mean they are ready. Place on a plate and cover with foil to help keep them warm.
    Clear any excess from the pan and place onto a high heat again. Add your olive oil and cook the chicken for roughly 5 minutes. Add the salt and bottle of chosen Henry’s Sauce and continue to cook for a further 5 minutes until the sauce becomes sticky.
  • Assemble the wraps by filling with your relish and chicken and serve.
